Bacon & Egg Damper [CAMP OVEN RECIPE]

A delicious breakfast to cook up in the camp oven!

  1. 310 g self raising flour
  2. 3 T oil
  3. 150 g tasty cheese, grated
  4. 2 bacon rashers, diced
  5. 1 shallot, finely sliced
  6. 1 egg + 2 extra for the top
  7. 1 t salt
  8. 3/4 C milk
  1. Preheat Camp Oven (around 190c).
  2. Combine flour, salt and oil in a bowl.
  3. Stir in shallots, bacon and 2/3 of the cheese.
  4. Combine 1 egg and milk in a separate bowl.
  5. Stir egg mixture into dry ingredients.
  6. Turn onto lightly floured board and knead lightly.
  7. Form into a ball and make an indent in the middle.
  8. Crack remaining 2 eggs into the hole and cover with remaining cheese.
  9. Place damper on baking paper.
  10. Bake for around 30 minutes or until golden brown.
